Melt butter in a skillet on low heat
Add olive oil to butter in the skillet
Pour lemon juice into skillet
Add sour cream and mix well
Stir mixture and add lemon zest (I don't have any lemon zest, using lemon juice from a bottle)
Add salt to sour cream mixture
Boil water to cook the pasta
Cool the pasta until al dente, then rinse with cold water to cool it off before baking
Combine cooled pasta and sour cream mixture. Add lemon juice to taste, I did about 3 tsp
Place pasta in an oven safe dish and cover with foil, bake 15 minutes with foil on top at 375, then remove it and bake about 10 minutes more
Take the dish out of the oven. Add more lemon juice. Sprinkle liberally with Parmesan cheese and add parsley
All done! Sorry my parsley is a bit wilted I had it in the fridge. Add Parmesan to taste and enjoy :)
