Gather supplies, use whatever u have in the fridge that u feel like adding! I had sliced ham and soft cheese as well as a little grated cheese and a pepper.

If your using peppers or other veg put them in the pan first for a couple of mins to soften up with the lid on. Put your grill on medium to high for later.

Stick all your ingredients in a bowl or jug, doesn't look too good yet does it?!

Meanwhile have a cup of hot water and frozen lemon slices to make you feel a bit better! :)

An oven would work but might dry the omelette out a bit, so I would put it in at quite a high heat but for a pretty short time and keep an eye on it!!! But be very very careful putting a saucepan in the oven because the handle might melt. I really only grill the omelette to finish it of, u can skip that step really if you like, or just flip the omelette in the pan on the stove so it's cooked on both sides! :)

Thanks guys! Well Margaret, the lemons and hot water thing is really just something I read about ages ago about hot water with lemon slices being good for kick starting your metabolism and giving you a little bit of energy. So I did that for a while but I hate drinking really hot things, and I was using half a lemon a day and the rest were going bad so I sliced them up and froze them! I use three slices in a mug of hot water and I make myself drink it standing up, not for any reason other than it wakes me up! Try it with any fruit I guess, limes are very energising! :) have fun x
