Get your ingredients ready, including two bowls for your egg whites/ yolks.
Start melting the dark chocolate over boiling water or use a microwave.
Prepare a double shot espresso. I prefer using an espresso machine with freshly ground beans, however you can substitute this with one tablespoon of instant coffee.
Separate your eggs into whites and yolks.
Beat the yolks and 1/3 cup sugar until well combined.
Add the double espresso shot to the sugar and yolk mixture and whisk until combined.
Your chocolate should now be ready!
Add the melted chocolate to the yolk, sugar and coffee mixture- be careful! The chocolate and bowl will be HOT! Mix until well combined. Place in a separate bowl.
Add the yolks, 1/3 cup sugar and a dash of vanilla concentrate to the bowl of your mixer.
Mix until egg white mixture is firm. This will take a few minutes.
Fold the egg whites into the chocolate mixture. Be sure to keep the mixture light and fluffy!
Continue adding the egg whites using a folding technique until combined.
Pour into a nice serving dish and if you're feeling EXTRA indulgent, add some shaved chocolate on top or gently mix through chocolate chips! Leave in the freezer over night and voila! Yum!

200g good quality dark chocolate
