I have an induction stove top so I could monitor the heat really well. Start with very low heat and only increase it if the chocolate really does not melt.

To the egg yolk mixture carefully add the melted chocolate (not all at once) and keep mixing it. It will turn into a thick cream. This is a crucial step so no pause here :)

Add the stiff egg white step by step. The first bit will be difficult because the chocolate is so heavy but it gets easier very fast. Resist to mix it to vigorously.

This is a valid point. I always make sure to buy the eggs the day or one day before I make the mousse. I make it in the morning to eat it at the same evening. You should not keep it for long. A night in the fridge is okay though. Following these rules I never had a problem.

One of my favorite desserts, but I've never made it myself. This looks simple. Thanks so much for the wonderful instructions!

I use whipped cream. The stiff egg white and whipped cream give the mousse the fluffiness.
