Peel tomatillos, rinse off, cut off stem, place in sauce pan.

Slice Serrano pepper tops, add to pan. 1 pepper for mild, 2 peppers for medium, 3 peppers for HOT!

Peel a garlic clove or two and add to the pan. My clove was large so I only added one.

Slice and peel half an onion and add to the pan.

Season to your heart's desire! Cumin, black pepper, and salt. Fill pan with water.

Place on stove. Heat on medium high until boiling.

Here is what it looks like after it has boiled.

Carefully add all* of the vegetables to a food processor. Add some of the water from the pan. Add some fresh cilantro and puree. Be aware that it is hot!

*I recommend you omit one or two Serrano peppers, blend, and check for spiciness. Add the rest and blend if it needs more heat.

Enjoy on a dish of your choice! I made this for my green chicken enchiladas (chicken filling and over the top). I also use it with beef and potatoes and sometimes just over some tacos.
