...so I spent many months trying to replicate that sauce until my numerous experiments resulted in this recipe. Here it is for you!  Enjoy!

Gather your ingredients (see full list under Supplies).

Squeeze fresh lemons to make 1/2 cup lemon juice.

Put salted water on to boil.

Grate lemon for lemon zest (1 tablespoon).

Now we put it all together - 2/3 c. grated cheese, 2/3 c. olive oil, lemon Juice, salt and pepper...

When water boils, add pasta and cook until done.

You can also add garlic powder to the mixture  - add 1 tsp. or even more if you're a garlic lover!

Drain the pasta.

Immediately add the lemon sauce to the hot cooked pasta. Top with the lemon zest and if you like, freshly ground pepper. Serve immediately. Elegant and delicious! And so easy to make! Buon appetito!

Supplies

2/3 cup olive oil

2/3 cup grated Parmesan cheese

1/2 cup fresh lemon juice (from about 2-3 lemons)

3/4 teaspoon salt (plus more to taste)

1/2 teaspoon black pepper (plus more to taste)

1 lb. pasta (egg noodles or fettuccine work best)

1 Tablespoon grated lemon zest

Fresh Garlic or garlic powder (to taste)

Optional: chopped fresh basil to garnish

Mmm...perhaps it could work with salmon or other fish. It's a pretty rich sauce so you might need to cut back on the cheese some. Let us know if you do try it! Cooking is all about creativity and adapting, so go for it!
