This is the island of Capri off the coast of Southern Italy where we wandered into a little hole in the wall restaurant that served the most amazing sauce I've ever tasted! It was made with lemons...
...so I spent many months trying to replicate that sauce until my numerous experiments resulted in this recipe. Here it is for you! Enjoy!
Gather your ingredients (see full list under Supplies).
Squeeze fresh lemons to make 1/2 cup lemon juice.
Put salted water on to boil.
Grate lemon for lemon zest (1 tablespoon).
Now we put it all together - 2/3 c. grated cheese, 2/3 c. olive oil, lemon Juice, salt and pepper...
When water boils, add pasta and cook until done.
You can also add garlic powder to the mixture - add 1 tsp. or even more if you're a garlic lover!
Immediately add the lemon sauce to the hot cooked pasta. Top with the lemon zest and if you like, freshly ground pepper. Serve immediately. Elegant and delicious! And so easy to make! Buon appetito!
