Go to your seafood market to make the purchase of the live crawfish. Each sack weighs 35lbs and there should be a lot of movement within the sacks... That means they are fresh and that is important!

Be sure to rinse each sack very well to get any residual mud off the crawfish.

It is important to keep the crawfish fresh, so get a lot of ice until you are ready for the boil.

As you rinse the crawfish, begin to fill your pot with water just a bit less than 1/2 way. Bring your pot to the fire adding a big bag of seasoning, boil bag, crab boil liquid and a lot of lemons.

Back to the crawfish... After a lot of rinsing... Open the sack and put the crawfish into your rope bucket. Add water and 1/3 of a box of salt.  This helps purge the crawfish...

With crawfish rinsed & purged and the pot rolling with a big boil, it is time to begin.

Slowly... Very slowly lower the crawfish into the pot.

Slow until they are fully submerged...

Cook the crawfish until the pot begins to boil again. As soon as it rages into a boiling pot, shut off your fire and let the pot sit for 10 minutes.

When the time is up, slowly open the lid and pull the crawfish out of the pot. Pour the crawfish onto a table and....

Key Reminders: -Thoroughly Rinse & Purge the Crawfish -Don't Eat Straight Tailed Cooked Crawfish -It's OK to Dust the Cooked Crawfish With Additional Seasoning if Needed -Don't Over Cook the Crawfish
