Keep refrigerated and take out some out when you need. If you see any black leaves in a week or so, remove them. You can also use this for spinach. Keeps cilantro fresh for atleast 10-12 days!

I guess letting all the evaporate and air tight jar are two tricks. Also the lower part tends to stale first, so better remove it..

Cool guide, thanks. I was given a similar tip which seems to work on the same principle. Put the bunch in a glass of water, cover with a small plastic bag (eg sandwich or freezer type), fix to glass with an elastic band, and put in the fridge.
