Crack an egg in a small bowl and add a pinch of salt.

Then pour in the egg and make into a circle without making it too thin.

In every instant noodle pack, there will be a little packet inside it. The packet has some seasonings and flavourings, so we're going to use that. But leave it aside for now. :)

In a pot, heat up some water and put the instant noodles in. Cook until......it's cooked. Lol

Once the outer part of the egg has kind of cooked through and the bottom part is light brown, flip it over.

Cook it for about 30 seconds and remove it from the pan. Set aside for later use.

In the same pan, add about 2-3 tbsps of vegetable oil on low heat.

Your noodles should be cooked now, drain it but, you wanna save some of that boiling liquid as it is quite starchy now after cooking the noodle.

Add garlic and red chillies to oil. Cook on low heat because we're not aiming to fry these up, but we want to flavour the oil.

After 30-60 seconds, or once you can really smell the garlic and chillies, turn the heat up to medium.

Now add in red onions (or white or yellow, it doesn't really matter) and chicken. You could use prawns, beef, whatever you want. You could also omit it or add any vegetables you want at this point.

Mix it around, let the onions cook down and the chicken cook through.

Slice it and toss it around. Doesn't have to be perfect, you can cut it however you want really. This is just the way I do it :)

So I added a couple tbsps of the earlier cooking liquid I reserved. Btw if you don't have enough of the liquid or forgot to reserve it, just use water. :)

Now add in the little seasoning packet from the instant noodle package. If yours doesn't have it, then simply add in salt & pepper to taste and paprika and cayenne, about 1/2 tsp of each.

Again mix it around and cook it till dry. It wouldn't take long at all. About 15 seconds. Then add in about 3-4 tbsp of the same liquid earlier. It might look a lot in my pics but it really isn't.

Add chilli sauce. I've been to the US before and I was quite sad when I found out they don't really use chilli sauce. If you don't have it, just use ketchup (same amount) and hot sauce, to yr liking.

Mix it and you're done! Btw you might realise that I didn't season this dish with any salt or pepper. That's because soy sauce is salty and the flavouring also includes salt. Taste yours & adjust!
