I tried baking the cupcakes in the cones but was disappointed with the outcome.  The cones lost their bright color and crunchiness.  It was time for plan B.

I was going to bake the mini cupcakes separately but I've ran out of flour.  A quick look in the unhealthy snacks closet and I discovered my older son's stash of brownies.

I started by dunking a brownie inside melted chocolate and placed it inside the ice cream cone.  When the chocolate hardened it acted as the 'glue', keeping the cone and brownie together.

I placed a second piece of brownie, in an upside down position, above the first brownie.

Next I prepared the icing.

For the ice cream scoope effect I used cream cheeses based icing.  But feel free to substitute with icing of your choice.  Adding food color is optional.

I've stabilized the cones in plastic shooter glasses arranged on a plate.  I then topped each cone with the icing, colorful candy sprinkles and a few Happy birthday signs. Mission accomplished.

@Savanna, the kids loved them. @Florence, she would love them. To make the kids even more hyper... I got extra sprinkles and and let each kid decorate their cone with more sugar ;). @Atoo, hmmm woos bk, I guess?!. Allison, just make sure you do that just before the play date is over so that you won't have to deal with two very hyper kids ;) @Reatha, but you can... All I did was improvise :) @Rane, thx, this little improvisation turned out to be a pretty good solution...

I covered the tray with foil then made hole to stand them up and use a simple cake recipie and they were soft

How did you manage to keep them crunchy? I tried it twice. Once like in the photo and the second time I wrapped the cone's bottom with foil. Both times the cone lost the crunchiness :(

I put the chocolate around the first brownie. Then I put more chocolate above it before placing the next piece. Honestly the kids didn't drop anything so I guess that did the trick. You don't need to put the extra brownie if your icing is solid. Mine was a bit in the soft side so the extra height helped.

If you did this step BEFORE the chocolate "glue" dries, wouldn't it make the finished treat more sturdy by not having the top half of the treat (icing, sprinkles and 2nd brownie) fall into your lap because its "glued" on?
