I've chosen to make this dish for my nutrition assignment because I eat this once a week so that I can include a lot of vegetables in my diet. I also decided to have a go at cooking it for my family!

What I have learnt cooking today is how to prepare and cook food correctly and how much nutritious stuff comes from the food. The final outcome turned out to be very tasty!

Ok, so I have an idea for leftovers (if there's any), add some red paprika (could be hot), one can of red beans, some frozen corn and you have some delicious a la Mexican dish :)
