Dear Janice bacon can not absorb fat when frying as you can see on the pictures there are more fat on the skillet after frying then before frying.

Janice you are so correct. Bacon creates a lot of fat. But I like to start out with a little to keep them from sticking, since I'm layering. :)

I think that you could pretty much eliminate adding the two tablespoons of fat. Bacon has plenty of fat in it.
