Preheat oven to 450 degrees.
Apply about 2 Tablespoons of fat, enough to cover bottom of pan.
Place in preheating oven.
Get your chicken ready. Rinse the chicken with water. Lay on paper towel to dry. You can use white or dark meat. I like the dark..goes on sale more often and is juicier.
I cut off the tail at the corner of the thigh.
I also cut off the fat and skin that is gathered at the edge.
*Important* With thighs its hard to get inside done. Feel on the thigh like this, there are two bones that meet. On the underside, you are pushing up till they release.
See? On the underside I am pushing up and they released. No Bloody Chicken Thighs for me!
Make sure all the chicken is dry. This gives you a crispy skin. I put paper towels under and on top.
Now add some flavor! I sprinkled with garlic salt. But the possibilities are endless of the flavors you can create. Massage in the chicken.
Now add some fat. I'm using olive oil. Massage that in the chicken.
Place the seasoned side, the skin side, down to cook first.
Now season this side. Garlic salt..massage in...
About 20 min later, check if brown on bottom. If so, flip over to brown other side.
Ready to go back in the oven.
30 min later. Chicken is done.
Serve with side of Jo Jo's Garlic Spaghetti. 🍴
