How to Cook Stuffed Vine or Cabbage Leaves - Under $10
So here's our lunch recipe. I'm sure you've seen these before. Sometimes called Dolomites, Yabrak, or less technical; stuffed vine leaves! We love unique dishes that don't cost a fortune to make.
We're making both these dishes for under $10. Yes both just $10 my friends. :)
Grab yourself a large cabbage. Did you know cabbage is a super food for weight loss? Neither did I until today!
Gently unfold the cabbage leaves as best you can. It doesn't matter if you tear some leaves. We can fix anything.
On low-med heat Boil about 1 little of water and put all the cabbage inside for just 2-3 minutes.
Put all your cabbage in the hot water. Just for a few minutes to soften it. We don't want to cook the cabbage.
Give it a quick stir. I'm sorry but I must warn you the smell at this stage is not so tantalizing. Just letting you all know.... It smells like ... Alright moving on.. Trust me, end result amazing!!
When you start to see the leaves' veins becoming clear, remove and drain the water. Leave them aside to cool down. We'll work on our filling.
2 cups of rice. We're just using a standard long grain rice.
Put your 500 gm mince in and let me introduce you again to my Mother's favourite spices. You can spice the mix to your own taste but keep the spice a woody spice like cinnamon, clove etc.
For now It's allspice, cinnamon, mixed spice and all purpose seasoning. You'll see these spices again soon.
A pinch of salt (to My mother its a bucket of salt). But seriously just a pinch!! Let's keep our blood pressure down. Hmm no chance, please add 2 tablespoons of butter or margarine.
Did we wash our hands? No need we're wearing gloves today. Mix it well.
Now let's go back to our cabbage. Cut about 10cm squares. Doesn't have to be perfect. You can check out the video on YouTube in full HD. Sorry I can't add the videos here as the files are 1.2gb each.
They should look like this. If you end up with smaller pieces, it's not a problem. Check out the video for how to roll small pieces.
We don't waste anything. With the hard bits and pieces you can't roll, use them as your first layer. It protects the next layer of cabbage rolls from burning.
See! Now wash your hands as no gloves are on. Kids of today! Anyway, place the mix onto the cabbage leaf....
Roll roll roll... Actually I have a very good Chinese friend who sang a song about roll roll roll your boss! Check the song out. Yep it's on my channel playlist "cooking with Micho" we're almost done
With your garlic add 3-4 pieces between each layer. And add more layers until you run out of cabbage or rice mix. You should have a lot of rice mix left over. We're going to use that don't worry ;)
Cover with more small or hard pieces of cabbage
Cover with plate and fill up with water until you just can see the water covering the plate. Cook over gas or hot plate for 20-25 minutes on high heat.
Do you have Vine leaves? If you don't it's ok to use more cabbage but this recipe will make 2 pots. One cabbage and one vine leaves. Do the same and fill the vine leaves with the same rice mix.
Stack the vine leaves exactly the same way as the cabbage, cover with plate, fill with water and cook the same way as the cabbage. 20-25 minutes on high heat. After that You're done!!
This is the stuffed vine leaves recipe...
And the the stuffed cabbage
Add As much plain yoghurt as you like and enjoy!!
Garnish the cabbage with lemon juice and dried mint.
