Ok. Back from walking to and from the store. Forgot the Olive Oil. I know, I know and they didn't have any Pancetta at all. Had to break out the regular Bacon. Seems like the bacon makes up for the lack of Olive Oil in texture, there was a lot of bacon fat. LOL. So I am eating it right now, it is AWESOME. I am so glad I am the only one home to eat all of this goodness. Thanks Chef :D

I'm italian, from Rome. This is the perfect way how to do "carbonara". I'll give you an extra tip... Not stir the pasta too much during the boiling time... Stir only twice, once at the beginning and once at the half time.

Would prosciutto be okay to use instead of the pancetta? Is pancetta smoked, and that's why it's used here? I always like the looks of the prosciutto better where I shop; plus it's AWESOME to crisp it up to use it on BLT's and grilled cheese sandwiches!
