Delicious!!! I used shiitake mushrooms as I'm highly allergic to mushroom grown from soil. I never use 'white' onions... Instead I used yellow onions (much sweeter) or when in season, Vidalia Onions which are crazy-insanely delicious! And another thing I did just a little differently, I added quite a bit of finely minced shallots and like you, garlic... I used dry white wine mixed with equal parts of water... Delicious! Italo, there's another gal on SnapGuide who cooks very much the same way you do. She's from Italy as well. Thank you so much for having dinner in front of me last night! I couldn't think of something till I saw your recipe! Yummm!!! Just grand! Ooh! Italo, you might want to throw in green peas or even shelled edamame! Delicious!
Around 100 ml... There isn't really a rule.. Play by the ear.. Add just a bit of water at the start and keep adding small drops till the onions and peppers are soft.
