Use cherry tomatoes, withe onions, garlic, fresh basil, pecorino cheese and extravirgin olive oil (sinolea method if available)
Cut the onion in thin slices
Put the onions and garlic together with the extravirgin olive oil in a pan
Put the water in a casserole in order to cook linguini and add salt when the water is boiling
When the onion comes gold add the tomates and adjust with salt and a pinch of sugar in order to reduce the acidity pf the tomates
Cook all together for 15/20 mins
At the end turn off the flame and add the fresh basil
In order to get a creemy sauce, add a bit of the cooking water ( from the casserole)
Put a bit of pecorino cheese on the base of the dish.
Mix the pasta with the souce for 2 mins
Add a bit of parmisan chese and fresh basil and Buon Appetito!!!
