How to cook a yummy pasta in risotto style - I know it sounds crazy, but trust me. Amount for 1 hungry person!

As most of Italian recipes, this is a very simple dish. High quality ingredients make a difference! If available, choose DeCecco pasta or Barilla (secondly).

If you don't manage to find an Italian pasta, when picking it in the shop, consider that the longer time it requires to be cooked (never less than 11/12 mins), the best quality is.

Use a 20(or so)cm wide saucepan. Put the oil and the garlic. Let it brown 2/3 mins, low heat.

Add the tomato sauce (I had a homemade one) - watch out for splashes!! It has to be very liquid. Add basil, salt and carrot, leave garlic inside. Cover and let it cook 10 mins, low heat.

Add pasta. I chose Conchiglioni (big shells) but any kind of 'short pasta' will make it. Cook it 15-20 mins, low heat. Stir every now and again. Don't let it overcook :)

The sauce will thicken and reduce quickly. This is how it looks when it's done. Pasta absorbs the tomato sauce liquid: more tasty than water, ha? Take off the carrot, basil and, above all!, garlic :)

@Dave: garlic, basil and the carrot are actually supposed to be there just to add flavour to the tomato sauce, not to be eaten! That's why you should have removed them at step n.6. Also, there is no need to chop them, as you are going to throw all the flavours. Anyway…! 😊

Just tried this. Since I had no garlic around I chopped up an onion. I should have also added the diced carrot at that point since it was still a bit tough at the end. Otherwise, mmmmmm :). My one and a half year old enjoyed it thoroughly too.

Is it because if the grain? Therefore you could argue that integral grains are better just because they take longer to cook..

Right... it's a kind of old tradition few families still have. Around mid August, in some countryside homes, families get together, buy tons of tomatoes, get up at dawn, wash the tom., cut them, cook, mash, pour the sauce into bottles and boil to store them for a long time. It was a torture when I was a kid :) -- Let's say, as soon as there are gonna be seasonal tomatoes, I'll write down a guide to make a quick one portion of fresh tomatoes sauce!
