Vanilla extract is simply vanilla beans infused into vodka over a period of time. Quite easy to make.

Since I follow the Paleo diet I use coconut butter, but you could use regular butter as well. Not sure how syrup would taste as they are a bit sweet already.

Some kind of a syrup?

What could you use as a topping for these?

For the pumpkin you could, I personally like to get the organic natural pumpkin that comes already done just bc of lack of time. The coconut you need the oil, not shredded coconut. If I knew how to extract vanilla from the bean, and oil from coconut that would work (I wish I did!) but I'm sure most people realistically will buy the product already done in its most natural form with no added preservatives :). The ingredients I used are used In any Paleo guide or cookbook.

I think you could make this even more paleo by using real pumpkin, real coconut, real vanilla bean etc instead of canned and bottled stuff -- YUM!!

Cool recipe but now I'm confused about the diet of our Paleolithic ancestors. I'll be trying it tomorrow morning. Thanks.
