The baking soda makes them extra fluffy! A little 'side step', - baking soda, (here in the UK we call it Bicarbonate of Soda), is a totally marvellous thing, I put it on my toothbrush, it's great for cleaning, of course, and it also kills fungus (or is it 'fungai'!), which you use it to clean your fridge, for instance. Apart from that these pancakes are delicious!! Thanks, Jecka!

You shouldn't beat the batter until the lumps are gone. You just mix the dry ingredients into the went until its well combined, but there should be lumps and bubbles. The bubbles in the batter are what make it fluffy!

When Vinegar combined with baking soda, it produces a chemical reaction called carbon dioxide which makes the batter light/airy and makes your pancake fluffy. 😉 You can use buttermilk in place of milk and vinegar as well.
