Use your fingers to press the dough flat against the sides. It's ok if it's a little lumpy! Make sure none of your pie dough sticks up over the top of the tin.

Squish the remaining dough together, roll out to 1/8 inch thickness, and cut more circles as needed.

Combine pumpkin, nutmeg, allspice, salt, sugar, and syrup in a saucepan.

Mix until all ingredients are thoroughly combined, and cook over med heat for about ten minutes.  Your goal is to dissolve the sugar, so cook longer if it's still grainy.  Stir frequently!

Set your mixer to low speed - you're just combining ingredients, and too high a speed will whip the heavy cream. On a hand mixer, use the "stir" speed.

Press the mixture through a sieve to remove any wayward egg lumps, as well as the ginger (if you used fresh).

Spoon mixture into dough filled cups. It's ok to fill them to the top - the pumpkin won't "rise" while it cooks.

Bake for 25 minutes at 375*. When cooled, remove from muffin tin. Top with whipped cream & sprinkle with cinnamon. Delicious!

Hi Darcy, thanks for your question! Technically yes - you are absolutely correct in that tarts only have a thin, bottom crust. Years ago, before I knew the difference, I got in the habit of calling full-size pies, "pie," and miniatures "tarts." It's a habit that's stuck with me - incorrect as it is. Happy baking! :)

Depends what size muffin tin you use. This is standard "muffin" size, and I made twelve. I had just a little of the pumpkin mix & a little dough left over.

Where did you find yours and what was the price range? I'm trying to slowly build up my baking arsenal with really inexpensive items so that I make sure I use them regularly, then when they break cause they're cheep and I can be all "hey significant other.... See how I stopped making those such and such you love? It's cause my fill in the blank broke so I'm gunna go buy a new one! But I use it so much I'm gunna get the good brand this time -insert 'innocent I didn't plan this all along even though you already know that's what's going on smile' here-

Nope, I meant allspice. The "edit" feature on Snapguide is a little buggy. When I added the above mentioned sugar, it deleted my allspice. Thanks for the heads up, I've fixed it - again. :)
