Now: for the blending. I like using my mini-blender, but mushing the banana with a fork works just as fine. I'm just too lazy to do that in the morning.

This is not necessary, but I like process improvement. I poured the mixture into a small cream jug. It makes it so much easier to pour into the pan later.

Just made these, they were great! I added some vanilla extract and put a few chocolate chips to add a bit of sweetness. Also make sure to make them small as they were really hard to flip!

I made something similar yesterday but I add a bit of coconut flour and a dash of home-made almond milk :) Love the idea of serving it with yoghurt, why didn't I think of that?!

Well, they are not as "bread-like" since they don't contain any flour. They are more moist, but they definitely do not taste just like eggs. Which is a bit strange. It's hard to describe, it's best to try for yourself. It's really easy ;)

I used a mix of colza oil and sunflower oil, but coconut oil is also very suitable. I don't know if I would use olive oil, considering that it has a quite strong flavor compared to the other oils. Good luck!
