Seriously, this is one of the easiest breakfasts ever and you don't have to be in the room for most of it! Fried Potatoes is great as a side to a large breakfast or as a whole breakfast!
I have a ton of tiny potatoes from the yard that I'm scoring, for larger potatoes, cut the pieces to about the size of your thumb.
Throw into a pot of boiling water and let sit for 3 mins before turning down to a simmer.
Peel and dice ( I sliced, but that's because I was In a rush, dicing is much better!!!) and throw them into a pan with the oil. Let fry for 3 minutes and bring to a simmer to caramelize.
After 10-15 mins the onions should be yellow or transparent and slimy, but definitely not hard or white! Then you know you're ready to move on.
Again, dice (don't slice!) the pepper and add to the pan.
Drain the potatoes that have been simmering and add immediately! Return the heat to medium high (around 7-8) and allow the bottoms to brown or even blacken, flip and repeat.
Serve in a bowl or as a side with sausage, eggs, and beans for a traditional English breakfast! Enjoy!
