500 grams of arborio or any Medium grain rice into hot water. We are making sticky rice so 1 cup of rice to 2.5 cups of water. This will boil the rice into a gooey mush. Perfect!

And this is what you should have. We didn't add any other spices or herbs to this due to the blend of flavours between parsley and cream cheese. They are superb together.

Place some cheese mix on top of your rice well. Be gentle please. The rice is mushy but still fragile. Close your hand slightly and roll the rice around the cheese.

I use a Nokia pure view 808 and a canon 5D. The rice balls were done with the Nokia 808. It's a 41 megapixel camera phone. They're amazing as a camera, terrible as a phone. :)

Hey Katie, feel free to use any type of cheese that is softened. For example you can gently melt down a cheddar, mozzarella or even a camembert cheese.. The filling is totally your choice. :)

Deep frying in olive oil may burn them. However if you wish to use olive oil, I recommend you just use an olive spray and bake the balls. You can also shallow fry them. Give it a try and let me know how you go :)

Of course. You can use coriander, mint, chives, onion, basil. It's really according to your taste. :) be careful with coriander it does have a smell when baked.
