How to Cook Coconut Walnut Muesli Cookies (Low Sugar)

Healthy and tasty! They actually look more like cupcakes but they have the texture of a cookie or granola bar.

I like the natural sweetener Truvia, which is made from the stevia plant. If you use granulated sugar instead, use 2 tbsp.

First, grind up the walnuts. I used this pyrex measuring cup and the thick wooden handle of a spoon as a makeshift mortar & pestle. Electric grinders work fine as well of course.

Measure out your muesli. I happen to like this brand, but you can buy another kind or better yet - make your own mix.

Read the description, it's not a traditional cookie. With the fiber content, if you were even able to eat 15 of these... well I think you get the idea lol

158 calories in one cookie? Looks delicious but lmao I think I'd eat about 15 and then gain 25 pounds. :)

Thanks, Draya. I have a 2nd version of this too. I sub out the yogurt for 4 tbsp of honey, add an extra 1/2 cup of muesli and an extra tbsp of coconut flakes. I baked for 20 minutes (5 min longer). The rest is the same. Try it out!

Thanks for the egg replacement.

Mar, you can replace the egg with half of a mashed banana, 1/4 cup apple sauce, tofu or egg substitute (some are even vegan). I've even heard of people using a little vinegar diluted with water or even some soda pop. However effective the last two are, I do not know. Hope that helps.

I wonder, is there something else you can use instead of an egg?

It's from an app called MyFitnessPal. You can make recipes by adding ingredients that they have in their database, then it divides it all by however many servings you choose. I've never found a food item that they don't have nutritional facts for.

Looks great. Definite going to try this soon. I was just curious as to how or what you used to calculate the nutritional facts for your cookies. Might be a dumb question.

Truvia comes in granulated packets (which I use), powder, and I think liquid. Plus there's other brands like PureVia and SweetLeaf. Or use the actual plant.

Is the truvia powder or liquid? I use Stevia also. Is it the same?

Jane From KY last year

Pat Gouin

I got into stevia because how horrible aspartame (Sweet'N Low, Equal, etc) and sucralose (Splenda) are for you.

I'm a big fan of stevia too. I have a blog and was sent stevia products to review and have been hooked ever since.

That's funny because I lost the same amount with it too. Gained some back, now I'm using it again.
