We dip the tender big end of each leaf in dip, then scrape the dip and tender part of the leaf off with our teeth. One of the pictures shows an eaten leaf.

If you like to cook several chokes at a time and store extras in the refrigerator, an easy and good dip for cold artichokes can be made by combining two thirds cup real mayonnaise with a tablespoon of melted butter, a tablespoon of lemon juice, and one fourth teaspoon curry powder.
