In a pan heat oil add mustard seeds and let them splutter once they start spluttering add cumin seeds and then add potatoes mix them   well and cover with a lid and cook on medium heat for 3 mins .

Potatoes are half way cooked now add salt turmeric chilli powder and fenugreek leaves stir it carefully and cover with a lid for 3-4 mins.

Tip: fenugreek leaves are full of flavor but are also bitter. If you don't like bitterness of the fenugreek chop it and mix some salt keep it aside in a bowl. 10 mins later squeeze the water and use.

But it doesn't give the same flavor specially in this recipie. I use dry in a lot of curries though it works great :)

A pinch of dry fenugreek on chicken curry does wonders to the taste .

If you don't have fresh fenugreek (methi) you can use the dry leaves too . Just soak the leaves up in some water for a few minutes . Strain the water n use as shown.

Not as far as I know. I googled it and it only says fenugreek you can get this frozen or fresh at any Indian grocery stores.
