German pancakes are super yummy & super easy to make. You can trick your brunch guests into thinking that you have gone all out for them when you really just threw stuff into a blender.

Put 1/4 cup of butter (half a stick) into a pan. The best pan to use is a Pyrex pie pan. If you don't have one, you could also use a cake pan, or even an oven safe skillet.

Set your oven to 425 and put the pan with the uncooked butter into it while you prepare the rest of the recipe. The butter will melt and brown while the oven preheats, and while you prep. See? Easy!

Blend the eggs on high for 1 minute. MAKE SURE THE LID IS ON TIGHT ON THE BLENDER. My ceiling and I cannot stress this enough.

Turn off the blender (important, trust me) and add 3/4 cup of milk. You can use whole milk, 2%, skim, whatever. I haven't tried it with soy, almond, or other non-dairy milks. You're on your own there!

With the lid ON blend on high for just a couple seconds.

Pour your mixture from the blender into the pan of butter. It will look like this. It looks icky now but just you wait. Pop it into your 425 oven. Set a timer for 20 minutes. You're basically done.

Meanwhile, your pancake will be doing the hard work in the oven. This is what it looks like when it is about halfway done. It gets better.

The pancake should pop out of the pan easily. Squeeze those lemons onto it, and sprinkle with powdered sugar. You can cut in half to share. Or in wedges to share with more. Or eat it all by yourself.

Oddly enough, I have to debate whether this is a German pancake too? My grandparents were German and the pancake was a staple in our household when I was growing up.. but then again I was told there was high German and Low German as far as the spoken language and they were both uniquely different. Maybe this pancake comes from a different part of Germany and made differently than the type I was used to? Either way, it sure looks yummy and easy enough to make. The possibilities for fillings are endless, I can't wait to try it! Thanks for sharing this one :)
