Wash eggplants for good measure, and slice into 1/2 inch thick rounds. Some folks like to wash the slices and give them a salt bath sweat to try and take out the bitterness. I leave that to you.

Set aside each breading to prepare for oven baking.

Place olive oil on baking sheet to prevent sticking and to add flavor !  Place single layers of breaded eggplant slices on to baking sheet, a bit of overlap is fine.

Bake for about 20-30 minutes or till a nice golden brownish color (as pictured)

This the fun part! Start layering!! Eggplant, mozzarella , sauce, Parmesan and repeat till you run out of ingredient layers, I like ending with lots of cheese and sauce for baking!

Mozzarella doesn't have to be perfectly grated I like to just rough-cut knife slices and chunks!

It was quite delicious, I only wish I would have cooked the eggplant longer in step 7, or just lightly pan fry in olive oil like I usually do. Other than that, mmmmmm...

@virgie -- yes exactly! i was given another recipe that required frying each eggplant slice in Olive Oil -- and Olive Oil is just not cheap!!! So I needed to find an alternative recipe that was healthy as well as budget friendly too!!!
