Preheat your oven to 180c (or 150c if using a fan assisted). This mix will make 6-8 cupcakes, depending on how full you like them to be :) I don't like real fat cupcakes so mine made 8!

Add 100g of softened butter to the bowl and sift in the caster sugar. Cream away until light and fluffy... Usually 4-5mins.  I put my favourite song on and dance away while mixing :P

Whisk up the eggs & mix with the vanilla extract. Measure out your flour ready.

Sift in roughly half the flour & half the vanillary-egg mixture & mix it up!

Add the other half of the flour & eggs. Mix up until your mixture looks something like this :) yumm!  This is the mixture for vanilla cakes, if you want to add some flavour now is the time ;)

I decided to make half of mine plain vanilla & make the other half lemon flavour. I did this by adding the zest and juice of half a lemon to half of the cake mix :)

Add your mixture into your cupcake cases, an ice cream scoop measures out the perfect amount :)

Bake for around 15mins, or until they look like this & bounce back when pressed lightly on top. Yummmmmy smell!

Place on a wire rack to cool down COMPLETELY.

Gather your ingredients for your buttercream frosting :) The way you make your icing is down to personal preference, mine is something like.. 75g of butter & 150g of icing sugar - but maybe more/less!

Beat up your icing until it looks like this.  You can now add flavours or colourings as you like. I added vanilla & yellow food colouring to half, and then lemon & pink to the other half!

Use a cup to hold your piping bag, whilst you fill it up with the frosting :)

Are you guys okay with like teaspoons and stuff? Haha oh and about 350 Fahrenheit :) if you have a fan assisted should be around 300F! Xx
